A plate of pancakes with syrup is a nice way to start the day, don’t limit yourself to lemon and sugar on Shrove Tuesday (created to use up ingredients during Lent, was English was a Catholic country). The secret to good pancakes is not to over-mix the batter, so don’t worry if you get a few lumps. You can interchange pancakes and waffles recipes (use pans free from Teflon and never cook around animals/birds with high heat, it can offgas – keep these recipes away from pets due to toxic ingredients like dough, chocolate, nuts, spices etc).

How to Make Vegan Crepes

Crepes are thin pancakes, often served on street stalls in France. Often filled with fruits and chocolate, the name is from the Latin word crispus (which means ‘crinkly’ in Greek!) Usually made with wheat or buckwheat flour, they make a nice sweet breakfast or dessert, or you can alternatively fill them with savoury fillings. Try these Classic Vegan French Crepes (It’s Liv B).
