A Stack of Homemade Pancakes
A plate of pancakes with syrup is becoming increasing more popular than a mix of white flour, white sugar and lemon juice for our Shrove Tuesday pancakes (created to use up ingredients, before Lent, when England was a mostly Catholic country).
Pancakes done well are actually a pretty good meal, especially with maple syrup and fresh fruits. We don’t usually recommend supermarket products, but M & S do a good plant-based pancake mix (just mix with oat milk, shake up and make your own pancakes in a few minutes. Recycle any plastic packaging for these with household waste or supermarket bag recycling bins.

Make Your Own Pancakes
The secret of good pancakes is not to over-mix the batter. A few lumps are fine, just mix it until it is smooth enough. You can usually interchange pancake and waffle mixes to make either, depending on whether you have a waffle-maker or not (avoid brands coated with toxic Teflon).
