This blueberry yoghurt smoothie (Waitrose) is super-simple to make, and far more interesting than the store-bought same-old, same-old boring flavour combinations. Way cheaper, and no plastic packaging either.
This is so simple to make, it’s not even a recipe. Just whizz up some fresh or frozen blueberries with fresh mint leaves, dairy-free yoghurt, a few ice cubes and some medjool dates (to sweeten). Once blended, pour into 2 tall glasses, and top with some more berries, if wished.
Smoothies are better really than juice, because they retain the natural fibre from fruit. If you don’t like eating fresh fruit, find a few smoothie recipes you like, and get a good blender (Russell Hobbs do a good one with a glass jug that’s around £50 and easy to clean). So it should last you years. And by saving money on ready-made smoothies, it pays for itself.
Know that it’s UK law that if you buy an electrical appliance from anywhere (a kitchen shop, supermarket, Argos), they have to take back your old one for recycling. So if you’re in the market for a new blender, be sure to dig out some dusty old appliance that’s never used from the back of your cupboard (a rusty waffle iron?) Saves you having to drive to the tip to recycle it!
If blueberries aren’t in season, stock up on Pack’d organic blueberries. You can recycle the packaging at supermarket bag bins, if your council doesn’t recycle soft plastic packaging.
