Vegan One Pound Meals is one of a series of budget-friendly books by London chef Miguel Barclay. No posh meals here (nor desserts) but simple meals with real ingredients (the ‘creamy spaghetti sauce is made with squash, not fake meat). And there’s a colour image of each recipe. This chef has a background in science, so likes to combine his love of cooking with love of budgeting, to help people to eat well. Miguel’s Spanish grandmother is not impressed by his super-simple meals, calling his recipe for paella ‘rice with stuff in it!’
