tinned green bean and mushroom sauce

We love this blog, as Sandra (an Estonian who lives in a hut and plays drums in a heavy metal band!) is more of the old school of recipes (even though she’s very young). No long lists, just ingredients you can find in any store, to whip up a tasty and nutritious meal.

This green bean and mushroom sauce (Vegan Sandra) literally adds cooked onions and sliced mushrooms to a can of drained green beans with some coconut milk, herbs and spices. After cooking for a few minutes, serve with rice, noodles or pasta.

Read up on food safety for people and pets. Just bin onion scraps (along with other alliums, citrus, rhubarb and tea/coffee waste) as they can harm compost creatures due to acids and/or caffeine).

These are the kind of recipes that people will make. Everyone loves green beans, but some people (say an elderly person who lives in a bedsit) is likely not going to be harvesting them from the garden, and putting them through a bean slicing machine).

If you like this recipe, check out Sandra’s English-language cookbook Plant-Based Comfort Food Classics. The 64 simple recipes include meaty lentil balls, savoury pancakes, lentil vegetable pie, ‘fish fingers’, no-bake chocolate cherry cake and even a recipe for vegan black pudding sausages!
