Beetroot soup is lovely, but not something that most shops offer. If you want to broaden your flavour choice, then make your own soup! Try this Creamy Beet Soup (Crowded Kitchen)
Unless for other reasons, don’t be alarmed if your pee temporarily goes pink after eating beets! Use palm-oil-free vegan butter. Keep these recipes away from pets, due to toxic ingredients. Don’t give leftover crackers/croutons to garden birds or wildfowl, as stale/crusty/mouldy bread can choke (butter can smear on feathers, affecting waterproofing and insulation).
Beet soup (borscht) is very popular in Eastern Europe and Russia. Areas like Siberia are so cold that car engines have to keep running (to stop the mfreezing), people with poor eyesight cannot wear glasses (they would freeze to your face), batteries go dead, ink freezes in pens and it takes two days to dig your grave!
Fancy something spicier? Try this curried beet soup with tandoori chickpeas (Minimalist Baker). You can always leave out the chickpea add-on for a simpler recipe.
Tofu Borscht (Full of Plants) is a Ukranian-inspired recipe using shredded beets and cabbage. It’s also a great way to prove that tofu is not tasteless, it just absorbs the flavours of what it’s marinated in.
