To make your own pastry is a good idea, to avoid palm oil, which is found in most commercial pastry doughs. Keep fresh dough away from pets (along with chocolate and toxic herbs etc), as it can expand in the stomach.
The Veg Space has a super post on how to make your own pastry, by a trained chef. This pastry uses a palm-oil-free block vegan butter like Naturli, and comes in 8 flavour variations:
- Vegan Cheese
- Mustard
- Fresh Herbs
- Almond
- Vanilla
- Chocolate
You can also find good recipes at Doves Farm (also for a coconut flour vegan pastry, below) and The Vegan 8 (a gluten-free vegan pie crust). Or for real simplicity, From My Bowl has a good recipe for a 3-ingredient pie crust. Shane & Simple has a good 3-ingredient no-fuss pastry recipe too.
Palm-Oil-Free Shortcrust Pastry (The Loopy Whisk) is a recipe by a science student who uses her left-brain knowledge to good effect. The secret is almond flour, which stops the pastry from being too tough. The ratio is made to ensure the shell of the tart can hold your fillings, yet is crumbly enough to eat. This is added to flour, vegan powdered sugar (Suma is a good brand), cold water and vegan butter. Her Vegan Flaky Pie Crust also uses frozen vegan butter, to make the dough easier to handle.
This Easy Pie Crust (Shane & Simple) only needs a few ingredients, and is very simple to make. Just flour, water, salt and maple syrup (omit for savoury pies).
