Vegan Spotted Dick (Domestic Gothess) is a lemon sponge with currants, serve with vegan custard. Made with plant-based block butter (Naturli is a good brand in shops), this is an ancient eggless pudding when people called ‘dough’ by another name (it was also called ‘spotted dog’). The Houses of Parliament have apparently renamed it Spotted Richard as the name was ‘less likely to cause a stir’. Perhaps they should be spending more time tackling the climate crisis and energy bills?
Use vegan butters with no palm oil. Keep this recipe away from pets due to toxic ingredients (like fresh dough and dried fruits).
Jam Sponge Pudding is a true comfort food-from-your-schooldays pudding, which is nice served with vegan custard. This recipe is from Katy Beskow’s fab book Easy Speedy Vegan. It’s a simple no-nonsense recipe (like all of her recipes – she’s a Yorkshire lass!) and all the affordable ingredients are easy-to-find in stores. If you want to splash the boat out, splurge on a good artisan jam.
