vegan carbonara

This recipe for vegan carbonara (Waitrose) is super-simple and delicious. It makes use of mushrooms and vegan bacon, for authentic flavour but created with kindness, and no cholesterol.

While your cashews soak in boiled water, fry up the garlic, mushrooms and salt. Then cook with the vegan bacon lardons, and boil your pasta.

Just before serving, blend the cashews and soaking liquid with cheesy-tasting nutritional yeast (or use vegan grated cheese). Mix it all together and serve the fresh parsley.

If you don’t want the bother of soaking the cashews, you could just sub the ‘sauce’ with vegan cream, then add grated vegan cheese to make it cheesy. Combined with the fried vegetables and vegan bacon, it’s a delicious dish, either way!

Top with more vegan grated cheese, if wished. Avoid Parmesan (this is not even vegetarian, as by law it contains a cheese that’s made with calf rennet (same with gorgonzola).
