vegan Mexican taquitos

This recipe for vegan Mexican taquitos (Ela Vegan) is a plant-based take on simpler versions of enchiladas. Ideal for watching the game with a chilled beer, the dish is also called ‘flautas’ if made with larger tortillas.

Alternatively, go ‘au natural’ and replace meat with canned beans. Black beans and pinto beans are especially good in Mexican food (as are kidney beans, but use tinned as they are quite complicated to cook from dried, due to having to boil them to remove a toxin).
