Just air-fry new potatoes (buy an air-fryer, will save you a fortune on bills!) These are marinated first in oil along with garlic, red onion and red pepper. After a few minutes, add sliced courgettes and fresh rosemary.
While you wait for your roasted potatoes to finish, gently fry the vegan chicken breast in a little oil, ready in around 10 minutes. Serve with the roasted spuds and veggies, and top with fresh rosemary.
Richard’s Amazing Vegan Roasts

Also try Richard’s vegan beef roast (also made with seitan). His vegan roast chicken is also made with seitan, with a balsamic cranberry marinade. Serve alongside his vegan sausage stuffing.
