vegan Mexican taquitos

Taquitos are simpler to make than enchiladas, they are basically small rolled tacos, with tasty fillings. Ideal for watching the game with a chilled beer, the dish is also called ‘flautas’ if made with larger tortillas.

This recipe for vegan Mexican taquitos (Ela Vegan) is a plant-based take on popular snacks that usually are stuffed with meat and cheese, then deep-fried. These beauties contain lots of veggies and optional vegan mince, and can also be made in the air-fryer. Likely 1000 times less calories!

We don’t have enough land in England for everyone to eat free-range. So assuming the whole country is not going to start eating lentils instead of meat tomorrow, vegan mince is something worth considering. You can find many brands in supermarkets, even the own-brand ones are quite good. Just be sure to choose brands free from palm oil (you can recycle the packaging at supermarket bag bins, if your kerbside does not collect). 

Alternatively, go ‘au natural’ and replace meat with canned beans. Black beans and pinto beans are especially good in Mexican food (as are kidney beans, but use tinned as they are quite complicated to cook from dried, due to having to boil them to remove a toxin).
