Super-quick plant-based recipes (under 30 minutes)

20 minute vegan

Sometimes it’s good to take your time over a slow recipe. But these recipe books are designed for people who are short on time, or who simply want good food fast, and want to get in and out of the kitchen!

Read up on food safety for people and pets. For tinned ingredients, rinse/remove lids (or pop ring-pulls over holes) then step on upper cans to pinch rims together, to stop wildlife getting trapped.

Unless you have food waste bins, just bin pepper and allium scraps (onion, leeks, garlic, shallot, chives), citrus/tomato/rhubarb scraps. To avoid acids harming compost creatures.

20-Minute Vegan is a super book which is packed with fun commentary (he wears white sunglasses and asks ‘do I look like I make boring food?) and will make it fun, to teach you how to cook!

He jokes that some people mistake him for being Jamie Oliver’s son! He’s not (and although Jamie is not vegan, he’s a huge fan of this fresh cooking star.

This book features 80 fast and fresh flavour-packed recipes, ideal for anyone on a budget or wants to cook, but doesn’t know where to start. From proper pastas to creamy curries and from fluffy pancakes to chocolate puddings.

You won’t find a bad review of this book. Not only are the recipes super-easy and super-tasty, but his commentary is fun. He doesn’t take himself (nor his food) too seriously:

Be prepared for me to crack a joke, because I don’t crack yolks! Calum

Most of these recipes serve ‘a big two’ so you can eat leftovers, or double up for four. Many recipes (like the pasta sauces) can also be chilled in the fridge. This is a book that has been thought through, for real people on real budgets.

That’s likely why Calum is only writing three cookbooks. He has not just churned out cookbooks with no prior thought. Bu taken real time and effort to ensure they are used, and not left on the shelf.
