broccoli pea soup

Broccoli & pea soup (The Veg Space) is affordable and easy to make, uses up the stalk of broccoli, and is served with olive oil and fresh basil, and grated vegan cheese. This soup freezes beautifully so pour leftovers into SouperCubes, then just reheat when you want another bowl! Never give leftover croutons to garden birds due to choking hazards, salt and fat.

Check medication before eating dark leafy greens, due to interaction with vitamin K. Read up on keeping people & pets safe in the kitchen (many ‘human foods’ including citrus, garlic, onion and spices are unsafe).

Broccoli is related to cabbage, and packed with nutrients. It’s one of the best vegetables for vegans, as it’s extremely high in calcium. One cup of broccoli also has more vitamin C than an orange. Native to Italy, you are actually eating ‘little flowers!’

These broccoli tater tots (So Vegan) are kind of like potato croquettes, but use broccoli instead. Serve with ketchup and go back to your childhood!

Cheesy vegan broccoli with white beans (The First Mess) is a wholesome recipe by our favourite chef. This is a high-protein feast of flavours, by a Canadian who grew up on her family’s organic farm. This one-pan dish is made with cashews and contains garlic, roasted peppers, shallots, spices and miso (avoid if pregnant/breastfeeding unless pasteurised).
