Three Super-Simple Vegan Mayonnaise Recipes

Here are three super-simple vegan mayonnaise recipes from Gaz Oakley (some say he’s the world’s best vegan chef!) But although his own food is quite complicated, this recipe is for non-cooks!

You only need a few ingredients like soy milk, lemon juice, white wine vinegar and oil, to make a mayo that tastes just the same, but is dairy-free and has no cholesterol. Add a little natural sea salt for extra taste.

It’s best to just bin lemon and garlic scraps, as acids could harm compost creatures.

Gaz also provides two tasty variations:

Baconaise is made with smoked paprika, maple syrup and liquid smoke, with minced garlic for some pickly punch.

Pizza Mayo (why not?) adds in minced garlic, and dried mixed herbs.

Every choice you make on what you eat, make and buy each day has peaceful political power! The dairy industry mostly uses factory-farmed cows for ready-made products.

You can buy vegan mayo in shops which is a step in the right direction. But making your own is one step more, and a delicious way to top salads and sandwiches.

The more you create a few staple homemade recipes, the less power the big corporate food world has over both you, and the rest of the world!

If you make a lot of sauces, it’s worth investing in a small immersion (hand) blender, to save the faff of always cleaning out jug blenders. They are pretty cheap from Argos or a kitchen store.

It’s UK law that stores selling you electrical appliances have to take back old ones. So a good excuse to take back that unused dusty waffle maker or chip fat fryer, and exchange it for a nice hand blender, to make homemade sauces and soups!
