Vegan Wedding Cakes (simple homemade recipes)

This Vanilla Wedding Cake (The Vegan 8) is not simple! But this is a good recipe for ambitious cooks or caterers being asked to make a wedding cake for customers.

Brandi took a lot of time and effort to make this recipe, and says not to sub even one ingredient. If you do it right, it tastes like conventional wedding cake, and also slices well. So it’s a trip to the shops to find cornstarch and white rice flour!

Before cooking, read up on food safety for people and pets (many foods are unsafe near animal friends). Bin citrus scraps as acids could harm compost creatures. Same with tomato, rhubarb and allium scraps (onion, leeks, garlic, shallots, chives). It’s okay to put them in food waste bins (made into biogas).

For tinned foods, fully remove lids (put inside) or pop ring-pulls back over holes (and pinch top opening closed) before recycling, to avoid wildlife getting trapped.

Do the maths for your wedding cake!

Portion maths doesn’t need a spreadsheet. As a rough guide, a 20 cm round cake gives about 12 to 16 party slices, and a 15 cm round gives about 8 to 10. If that still feels fuzzy, plan for slightly more cake than you think, because wedding slices vary.

For a small wedding, a two-tier cake (for example, 15 cm plus 20 cm) can cover roughly 20 to 30 servings. For a bigger crowd, a three-tier can work, but it also adds weight and stacking pressure.

How to Spot Quality Vegan Ingredients

There are many companies offering vegan wedding cakes, but be sure to check the ingredients (avoid ones with palm oil or pet-toxic xylitol (lethal from a few dropped crumbs). 

Also be sure that the baker uses proper flavourings (like real vanilla over fake). Anything with an E-number is not a proper artisan baker.

One supermarket ‘luxury chocolate cake’ contains refined sugar, glucose syrup, palm oil, lots of unfamiliar ingredients and more palm oil. And fat-reduced cocoa powder (it does not even contain any real chocolate!) So it’s not tasty, not healthy, packed in plastic, and expensive for what it is.
