Squash is wonderful to make creamy sauces for pasta, but many people are put off, as it’s so difficult to cut. In fact, a good knife is likely the answer, ensure a damp cloth is underneath your chopping board to keep things steady. Trim off both ends, cut through the middle and then remove the seeds. You can roast it first to soften the skin, before chopping up.
You can now buy plastic-free pasta grown with British wheat from The Yorkshire Pasta Co and Northern Pasta Co. Top with vegan Parmesan (conventional Parmesan is not even vegetarian as it contains a cheese made with calf rennet).
