(vegan) Bakewell Tart Recipes (from Derbyshire)

Bakewell tart is one of England’s favourite tea time treats, especially when served with vegan custard. It’s obviously hailing from the Peak District town of Bakewell, but today you can make animal-kind plant-based versions (which are cholesterol-free, so you can eat more of it!)
What is Bakewell tart if you are not reading in England? It’s basically a shortcrust pastry tart with a thin layer of jam, and a light almond filling with flaked almonds on top. It can be made with raspberries (more affordable) or sometimes cherries.
Use shortcrust pastry (Flora and Lurpak vegan butters have no palm oil).
Keep dried fruits, nuts and raw dough away from animal friends. Read more on food safety for people and pets. For tinned foods, remove and pop lids inside, or pop ring-pulls back over holes (pinch top closed) before recycling, to avoid wildlife getting trapped.
