Roasted Root Vegetable Wellington

This show-stopping centrepiece takes roasted sweet potato, carrot, parsnip, and mushrooms wrapped in golden puff pastry. Add spinach and a nutty pesto if you like. The outside goes crisp and flakey while the veggies inside stay sweet and soft. Brush the top with plant milk for a lovely shine, then slice and serve hot.
