Vegan Eton Mess (a traditional favourite from Berkshire)

Eton Mess was indeed invented at Eton college in Berkshire. This traditional dessert consists of a meringue with fresh strawberries, smothered in cream.
But of course, these days we have plant-based options that are kind to animals, avoid factory-farming and palm oil, and are cholesterol-free. Still retaining traditions, but with compassion!

How can you make vegan meringue?

Yes, you can! It’s made by whizzing up the leftover brine water of canned chickpeas with sugar, to make something called ‘aquafaba’ (Latin for ‘bean water!) Once you know how to make this, you can use it for all kinds of goodies like this vegan lemon meringue pie!
Keep citrus fruits away from pets.
