Vegan Party Trifle (homemade recipes)

Most of remember growing up enjoying a bowl of Bird’s trifle with jelly, custard, cream and hundreds & thousands on top. But today things are different, and we want more natural homemade versions.
This vegan sherry trifle (The Veg Space) is a simple version of the traditional Bird’s Trifle. Use with vegan jelly, and a vegan sponge (below) soaked in sherry. Then you add berries, vegan custard and cream, and top with toasted almonds. Obviously you can amend the recipe (like omitting nuts and alcohol for children), or swap the booze.
Before cooking, read up on food safety for people and pets (vanilla, chocolate, nuts and alcohol are unsafe near animal friends). If used, bin citrus scraps, as acids may harm compost creatures (same with rhubarb, tomato and alliums – onion, leeks, garlic, shallots, chives). It’s okay to put them in food waste bins (made into biogas).
For tinned foods, fully remove lids (put inside) or pop ring-pulls back over holes (and pinch top opening closed) before recycling, to avoid wildlife getting trapped.
Make Your Own ‘Sponge Fingers’
The main bugbear is finding a vegan sponge cake that’s free from palm oil. Instead, just make your own vanilla sponge cake (just 7 ingredients without the frosting). If you want to make traditional ladyfingers, go for it (you can also use these for vegan tiramisu recipes).

This trifle recipe (School Night Vegan) is a bit more fancy to make, but just look at it! You can massively simplify this recipe by using simple sponge and ready-made custard and cream. Then just use the photograph and layering advice for inspiration. Top with raspberries, toasted almonds and fresh mint.
